This is from the husband of a friend of mine. He swears it is awesome with the ground Buffalo...I've made it with ground beef, and it was really good that way.

Ingredients
  • 2 tablespoons olive or vegetable oil
  • 2 large onions, chopped
  • 1 large green pepper, chopped
  • 1 to 2 teaspoons cayenne pepper
  • 1 tablespoon ground cumin
  • 1 pound ground buffalo (available at Kroger)
  • 1 (12-ounce) bottle dark beer
  • 2 to 3 tablespoons chili powder
  • 3 (10-ounce) cans Rotel brand tomatoes (with green chiles)
  • 3 (15-ounce) cans black beans, rinsed
  • 1 (15-ounce) can large white hominy, drained
  • Salt to taste

Directions
  1. In a large pot, heat oil and saute the onions and green pepper for 5 to 10 minutes, adding the cayenne and cumin, until onions are translucent.
  2. Add the buffalo and cook until browned.
  3. Add the beer and chili powder, stir well.
  4. Add the tomatoes, beans and hominy.
  5. Add salt to taste.
  6. Simmer for an hour or more.

I am printing this one out and posting to the fridge...I've only had buffalo once, that was last Summer, grilled buffalo burgers. OMG, so good. I bet it would make an awesome chili.

Wow, this sounds different and so delicious! I love beer in chilis, and a very interesting addition of hominy here! I didn't know Kroger carried ground buffalo, I'll have to make a trip there! Love the picture!


Good recipe and was well-liked at a chili cook-off at work. I always like to add my own flare to a recipe and substituted cilantro for the green pepper, and added a couple small cans of mild Hatch green chillies. The next time I make this, I will use corn instead of the hominy for a nuttier flavor. I used extra stout Guinness beer.
