How to make it

  • In a large pot, heat oil and saute the onions and green pepper for 5 to 10 minutes, adding the cayenne and cumin, until onions are translucent.
  • Add the buffalo and cook until browned.
  • Add the beer and chili powder, stir well.
  • Add the tomatoes, beans and hominy.
  • Add salt to taste.
  • Simmer for an hour or more.

    Good recipe and was well-liked at a chili cook-off at work. I always like to add my own flare to a recipe and substituted cilantro for the green pepper, and added a couple small cans of mild Hatch green chillies. The next time I make this, I will use corn instead of the hominy for a nuttier flavor. I used extra stout Guinness beer.

    Wow, this sounds different and so delicious! I love beer in chilis, and a very interesting addition of hominy here! I didn't know Kroger carried ground buffalo, I'll have to make a trip there! Love the picture!

    I am printing this one out and posting to the fridge...I've only had buffalo once, that was last Summer, grilled buffalo burgers. OMG, so good. I bet it would make an awesome chili.
