Stuffed Sweet Potatoes Recipe
although potatoes are cooked in the crockpot, one can cook the potatoes any method they wish till soft and then stuff them

Ingredients
  • 5 sweet potaotes
  • 1/2 cup soft butter
  • 1/4 cup light cream
  • 2 Tbs honey
  • 2 Tbs dark rum
  • 1/2 tsp cardamom
  • 1/4 tsp sea salt
  • 2 Tbs walnuts -- chopped

Directions
  1. Wash potatoes; drain excess water.
  2. Place damp potatoes in slow-cooking pot.
  3. Cover and cook on Low 5 to 6 hours oruntil done.
  4. Cut off the top third of each potato lengthwise and scoop out, leaving a 1/4-inch shell.
  5. Mash potato pulp with butter, cream, honey, rum, cardamom, and
  6. salt.
  7. Return mixture to shell.
  8. Top with walnuts.
  9. Arrange in shallow baking sheet. Bake in 425 F oven for 15
  10. minutes.
