How to make it

  • Cut seitan and vegetables into chunks about 1” squared.
  • Bring water to boil, add seitan and lemon zest, and reduce heat. Let simmer for about ten minutes. Drain and discard zest.
  • Arrange seitan, veggies, and pineapple onto skewers (be sure to use ones you’ve soaked overnight).
  • Place on hot grill, turning them over after a few minutes.
  • During last two minutes of grilling, brush with pineapple glaze.
  • Brush once more with glaze when you take them off the heat.
  • Arrange on a platter with cup of glaze in center.
  • Garnish with chopped cilantro if desired.
  • To make pineapple glaze:
  • Combine first 5 ingredients in small pot.
  • Bring to slow boil, stirring frequently. Make sure sugar dissolves.
  • In small glass, mix cornstarch and water until cornstarch has dissolved (no lumps).
  • Add cornstarch mixture to pot.
  • Continue boiling, stirring until glaze starts to thicken. Bring off heat and let sit 5-10 minutes.
  • Glaze should continue to thicken upon standing.
  • You may want to double measures to ensure you have enough for skewers and dipping afterwards…or the fridge for another day!
