How to make it

  • Peel and halve sweet potatoes.
  • Stand potato sections up on cut end and slice vertically into planks about ¼” thick.
  • Add planks to hot oil and fry until they begin to brown lightly on each side, and are tender when pierced with a fork.
  • Drain on paper towels and salt while hot.
  • Serve hot.
