Sweet Potato Planks Recipe
Warm, sweet, and salty sweet potato planks...makes a great appetizer, side dish, or snack.

Ingredients
  • 4 large sweet potatoes
  • Oil for frying
  • Salt

Directions
  1. Peel and halve sweet potatoes.
  2. Stand potato sections up on cut end and slice vertically into planks about ¼” thick.
  3. Add planks to hot oil and fry until they begin to brown lightly on each side, and are tender when pierced with a fork.
  4. Drain on paper towels and salt while hot.
  5. Serve hot.
