Ingredients
  • .
  • Ingredients for the cookies:
  • 3 ounces raw almonds
  • 1 1/2 sticks unsalted butter, cut into large chunks
  • 5 ounces fine semisweet chocolate, chopped
  • 2/3 cup granulated sugar
  • 3 tablespoons unbleached all-purpose flour
  • 1 tablespoon espresso powder or Original Blend coffee, finely ground
  • 3 large eggs
  • 1 tablespoon whiskey

Directions
  1. Preheat the oven to 325°F.
  2. Spread the almonds on a baking sheet and bake for 8-10 minutes, or until toasty and fragrant.
  3. Set them aside to cool. Watch carefully that they do not burn.
  4. Increase the oven temperature to 375°F. and spray a nonstick madeleine pan) with a thin film of cooking spray.
  5. Place the madeleine pan on a baking sheet.
  6. Heat a large saucepan with water.
  7. When it is simmering, place the butter and chocolate in a medium metal mixing bowl and place the bowl over the saucepan but do not allow it to touch the water.
  8. (You can use a double boiler, too, but make sure the top pan does not touch the water in the bottom pan.)
  9. Stir with a wooden spoon until the mixture is smooth and velvety.
  10. Remove from heat and stir in the sugar until well incorporated.
  11. Set aside for at least 20 minutes.
  12. Using a food processor or grinder, grind almonds, flour, and coffee grounds until they form a very fine powder.
  13. To combine all the ingredients, add the eggs, one at a time, to the melted chocolate, stirring to completely incorporate.
  14. Add whiskey, dry mixture, and stir well but do not overmix or batter can become too thin.
  15. Chill if needed to thicken mixture
  16. Fill madeline molds about 2/3 full.
  17. Depending on the size of the molds bake 10 to 15 minutes or pale golden and set.
  18. Yield also depends on size of molds

These sound heavenly! Love the whiskey and coffee addition here!

WOW. I have recipes for Madeleines but nothing like this one. These sound incredible. Thanks so much for posting it cause I'll be trying them out real soon.55555+++++

I love this recipe! I haven't seen one like this one so I'm eager to try this.

Wow..that sounds delicious!!!

The same goes for me here as well. I've never seen one like this before. I think when I made them the last time I added orange peel to the batter. I've never seen almonds added or the coffee or the whiskey....

What would you suggest if you don't have the whiskey? I don't drink and don't really want to buy a big bottle of it. I guess I could get a little bitty bottle of it in a 7-11 or some where like that? Is that flavor really important in the dish? Is it that noticable?

I do have some sliced almonds in the pantry that might turn into this dish.

Thanks for sharing!
