Shrimp and Grits with Bacon

- 1 tablespoon butter shopping list
- 1 tablespoon olive oil shopping list
- 1 large onion, finely diced shopping list
- 2 cloves garlic, minced shopping list
- 2 cups milk shopping list
- 3 cups water shopping list
- 1 cup grits shopping list
- 1 1/2 cups cheddar cheese, finely grated shopping list
- 8 ounces bacon, chopped shopping list
- 20 medium to large shrimp, peeled and deveined shopping list
- 1/4 cup scallions, chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Add butter and olive oil to a saucepan over medium heat.
- When butter has melted add the onion and cook until soft.
- Add garlic and cook for another minute.
- Turn heat to high and pour in the milk and water.
- Bring to a boil and slowly whisk in the grits.
- Turn heat to medium low and cook, stirring occasionally for 15 to 20 minutes.
- When done, dump in the cheese and stir until it melts.
- Season with salt and pepper and set aside.
- Put bacon in a large skillet set over medium high heat.
- Cook until golden brown and crisp.
- Drain to paper towels.
- Remove all but 3 tablespoons of the oil.
- Set skillet back over medium high heat.
- When nearly smoking, add shrimp.
- Cook until pink, about 1 1/2 minutes per side.
- Scoop some of the cheese grits into a bowl.
- Top with shrimp, bacon and scallions.
- Season to taste with salt and pepper.
