Cuban Black Beans

- 1 16 oz can of black beans shopping list
- 1 medium onion, finely chopped shopping list
- 1 large clove of garlic, finely chopped shopping list
- 1 Tbsp olive oil shopping list
- 1/2 Tbsp ground cumin shopping list
- 1/2 Tbsp balsamic vinegar ( I used cider vinegar because it was closest to the stove). shopping list
- salt and pepper to taste shopping list
How to make it
- Heat a frying pan or small pot and add olive oil. When hot, add the onions and garlic. When soft, add some salt, pepper and the cumin. Cook until fragrant.
- Add the black beans with their liquid, 1/2 cup water and the vinegar.
- Bring to a boil, lower heat and simmer for 20 minutes to let it thicken again.
- Serve. It is traditional to serve this with white rice. I served it with boiled sweet potatoes and loved it.
