Pumpkin Cheesecake Bars

This is a must try. Even people who do not like pumpkin pie usually like this. My kids can almost eat the whole pan (probaly would if I let them).
Ingredients
- CRUST shopping list
- 2 C all purpose flour shopping list
- 11/2 cubes butter shopping list
- 1/2 C brown sugar shopping list
- 1 C chopped walnuts or pecans shopping list
- FILLING shopping list
- 2 - 8oz cream cheese (softened) shopping list
- 1 1/2 C sugar shopping list
- 2 tsp allspice shopping list
- 1 tsp vanilla shopping list
- 4 eggs shopping list
- 3 tsp cinnamon shopping list
- 1 C pumpkin shopping list
How to make it
- Crust
- Combine flour, brown sugar, and butter in a bowl.
- Mix together until crumbly
- Mix in nuts
- Take out 1 C and set aside
- Press remaining mixture in the bottom of a 9x13 baking dish.
- Bake at 350 degrees for 8 minutes
- Filling
- In a mixing bowl cream together cream cheese, sugar and vanilla.
- Mix until very smooth
- add eggs, pumpkin, allspice and cinnamon.
- mix well
- Pour over baked crust.
- sprinkle topping that was set aside over the top
- bake at 350 for 30 min
- It will be jiggly when done but it will set up as it cools.
- do not overcook.
