Ingredients
  • 1 pound linguini
  • 1/3 cup olive oil
  • 1/3 shallot OR onion, minced
  • 1/4 cup sun dried tomatoes, chopped
  • 1 tablespoon lemon zest
  • 1 tablespoon garlic paste
  • 4 ounces prosciutto, torn into small pieces
  • 1/3 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 cups baby spinach, loosely packed
  • 1/2 cup toasted pine nuts
  • Parmigiano Reggianno OR grana Padano cheese, grated for garnish

Directions
  1. In large pot cook linguini to al dente.
  2. Meanwhile, in a large deep skillet heat oil over medium high heat.
  3. Add shallots or onions, tomatoes and zest.
  4. Cook for 1 minute, stirring constantly.
  5. Add garlic paste and cook 1 minute, stirring constantly.
  6. Add prosciutto and cook about 2 minutes OR until crisp.
  7. Drain linguini and add to skillet along with lemon juice, salt and pepper.
  8. Toss over medium heat to combine.
  9. Add pine nuts and toss again.
  10. Garnish with cheese shavings.
