Cauliflower With Cheesy Dijon Sauce Recipe

Cauliflower With Cheesy Dijon Sauce Recipe
This tangy delight is easy to make and will be loved by the whole family. Using low fat mayonnaise and low fat cheese help make it a bit healthier and don't diminish the flavor at all.

Ingredients
  • 1 head cauliflower
  • 1 cup reduced fat mayo
  • 3 Tbsp dijon mustard
  • 1 Tbsp garlic powder
  • 1/4-1/2 cup reduced fat shredded sharp cheddar

Directions
  1. Pull the leaves off your cauliflower and cut off the stem.
  2. Put it on a rack in a big stockpot with about an inch of water in the bottom and bring to a boil. (If you're like me and don't have a rack, just leave enough stem for it to balance on and not quite sit directly in the water.)
  3. Reduce to a simmer, cover and cook for approximately 20 minutes or until you smell it.
  4. Meanwhile, mix 1 c. of mayo with 3 T of dijon mustard and 2-3 tsp. garlic powder. Mix well and then add the cheddar.
  5. Remove the cooked cauliflower head to a baking dish, and spread on the mayo mix.
  6. Broil long enough to melt the cheese and just barely begin browning parts of it.
  7. Take out and use a knife to remove any remaining stem. It will be very soft and easy to do.
  8. Then use a spoon to break the cauliflower up and mix the sauce in well. (If you've got any stem left, you'll find it during this step because it won't break up easily.)
  9. Serve!

This sounds great.

Imagine my DElight when I logged in tonight and saw my grandchildrens smiling faces on my "My Stuff" page!!! That made my day...and I was also very glad to hear they all liked the cauliflower dish (even you - wow!)...thanks for posting it so I can try it - it does sound tasty, and you know how much dad and I already love cauliflower...I'll try this next week. Now that you're cooking at home more, will I be seeing more posts from you?!?!? Love you, mom

I love step 3...cook until you smell it. When they come ask when dinner is gonna be done I say, 'when you smell it' lol

I'll be trying this soon. :)

Mrtnzangel8 - Too funny! I must confess that I got that tip from the person who gave me the recipe, but it works! When I could smell cauliflower in the steam, it was ready.

Krumkake/mama - I'm definitely experimenting with more recipes again, so yes, I'll have to post more of them here. I gotta start remembering to take pictures like you always do!

You KNOW what a visual person I am! That's why I like all those pictures of my grandchildren!! Keep that camera ready, and I'm looking forward to seeing what you're coming up with next - cooking at home isn't so bad after all, is it?? Ok, so you hate the clean up - pretty soon, Maggie and Gus will be old enough to do that! Well, it may be a few more years, but nonetheless, something to hang on to...love, mom

This is a great recipe, love it! Saved, with 5 forks, thanks!
Deb
