How to make it

  • In a large bowl beat together butter, sugar and eggs. Add orange zest and vanilla.
  • In medium bowl stir together flour, baking powder and salt until well mixed. Add dry ingredients to butter mixture and stir to form a dough. Stir in cranberries and nuts.
  • Divide the dough in half and place each piece on baking sheet. Shape each piece of dought into a log approx, 3 inches wide and 10 inches long.
  • Bake Biscotti at 350 degrees until light golden brown and fairly firm, about 20-25 minutes. Cool logs at least 10 minutes. Transfer logs to work surface and slice into 1 inch strips.
  • Place biscotti back on baking sheet and bake at 300 degrees for approx. 8 minutes then turn and bake again for another 8 minutes until dry and crisp. Store in airtight container for weeks!
