Ingredients
  • 2 tbsp of vegetable oil
  • 20 oz. of ground turkey meat, 93 lean 7 fat.
  • 1 large onion, minced
  • 4 cloves of garlic minced
  • 1 4 ounce can of tomato sauce
  • 1/2 cup of red wine
  • 1 tsp of cumin
  • 1/3 tsp of thyme
  • 1/2 tsp of black pepper
  • 1/4 tsp of salt
  • 1/2 cup of raisins
  • 1/2 cup of chopped green olives

  • 2 tbsp of vegetable oil
  • 1 large onion chopped fine
  • 1/2 yellow pepper chopped fine
  • 1/2 red pepper chopped fine
  • 2 stalks of celery chopped fine
  • 3 cloves of garlic chopped fine
  • 1 cup of medium grain rice
  • 2 tbsp of parsley flakes
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • 1 can of chicken stock
  • 1/2 cup of water
  • 1/4 tsp of thyme

Directions
  1. In one saute pan, heat oil, brown turkey meat.
  2. Add onion, garlic, saute five minutes.
  3. add wine, tomato sauce, herbs and spices.
  4. Simmer on low while the rice cooks.
  5. Add raisins and olives and heat ten minutes.

  7. In a second pan, heat oil and saute onion, peppers,celery, garlic
  8. (sofrito) until tender.
  9. Add rice and toast lightly.
  10. Add broth, water and seasonings.
  11. Cover tightly and reduce heat to low and cook twenty minutes.

  13. Serve picadilllo over rice.
