Oven Fried Chicken Recipe
This is good hot or equally good cold on a picnic. To spice it up, increase hot pepper sauce to 1 tablespoon, add 1/2 teaspoon chili powder and 1/4 teaspoon cayenne pepper to coating mix.

  • 2 cups buttermilk
  • 2 tablespoons Dijon mustard
  • 1 1/4 teaspoons salt
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon hot pepper sauce
  • 8 bone-in chicken breasts, skin removed
  • 2 1/2 cups cornflake crumbs
  • 3/4 cup fresh breadcrumbs
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil

Directions
  1. Whisk together buttermilk, mustard, 1 teaspoon salt, 1 teaspoon garlic powder, 1/2 teaspoon black pepper and hot pepper sauce.
  2. Add chicken and turn to coat. Cover and chill overnight.
  3. Combine cornflake crumbs, breadcrumbs, remaining garlic powder, remaining black pepper , remaining salt, poultry seasoning, paprika and cayenne.
  4. Drizzle oil over crumbs and toss.
  5. Remove chicken from marinade and dredge in crumbs, firmly pressing crumbs onto all sides of chicken breasts.
  6. Place chicken on rack in shallow baking pan.
  7. Bake at 400 degrees for 35 to 45 minutes or until chicken is golden brown and juices run clear.
  8. Serve warm or cold.
