Another classic out of my mother's kitchen that I've been cooking many years to my husband's enjoyment. Okra stewed in tomato sauce, onion, garlic and olive oil in the traditional Greek style.

Ingredients
  • 1/4 cup olive oil
  • 1 onion; peeled and chopped
  • 1 lb small fresh okra
  • 1 teaspoon sugar
  • 1 large garlic clove; minced
  • salt and pepper; as needed
  • 1 cup tomato sauce
  • 1 cup water

Directions
  1. Trim the cone shaped tops from the okra, wash, drain and dry thoroughly.
  2. Heat the olive oil in a large frying pan and add the chopped onion.
  3. Cook gently until the onion is tender.
  4. Add the okra, sugar, garlic, salt and pepper.
  5. Mix.
  6. Add 1 cup tomato sauce and 1 cup water.
  7. Mix again.
  8. Cover and simmer for 45 minutes to one hour until sauce is thickened, adding additional water if necessary.
