Roasted Harvest Vegetables

- 1 medium butternut squash, peeled, seeded shopping list
- 1 large sweet potato shopping list
- 2 yukon gold potatoes shopping list
- 2 red delicious apples shopping list
- 2 medium yellow onions shopping list
- 1/8 cup honey shopping list
- juice from 1/2 a lemon shopping list
- 1/2 teaspoon ginger powder shopping list
- 1/2 teaspoon garlic powder shopping list
- 1/2 teaspoon black pepper shopping list
- 2 dashes cinnamon shopping list
- 4 Tablespoon olive oil shopping list
How to make it
- Peel and cut onions into 1/4 wedges
- Cut apples into 1/4 wedges
- Cut all vegetables into 2" cubes place all into large greased roasting pan (the pan should be large enough so vegetables are not piled on top of each other)
- Mix honey, lemon juice, olive oil and spices together pour over vegetables and toss.
- Roast at 400 degrees stirring every 30 minutes until tender
- Goes well with roasted chicken, pork loin or turkey.
