Hot Cauliflower With Shrimp

This is from Derek Blixen, manager of the Pan American World Airways Oslo office circa 1964. I got it from Roadfood.com this weekend - LOVE to try new cauliflower recipes! Esp when they also contain shrimp!
Ingredients
- 1 large cauliflower shopping list
- 2 cups milk shopping list
- 1/2 medium onion, minced shopping list
- 2 sprigs dill, chopped shopping list
- 4 tablespoons butter shopping list
- 4 tablespoons flour shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon white pepper shopping list
- 2 cups cooked and shelled shrimp, chopped shopping list
- 1/4 cup heavy cream, whipped shopping list
- 12 cooked and shelled shrimp, whole shopping list
- 2 tablespoons minced dill shopping list
How to make it
- Trim cauliflower, wash thoroughly and cook whole in boiling salted water;
- Make the sauce. Combine milk, onion and dill, and bring to a boil;
- Melt butter, stir in flour and cook 3 minutes, stirring constantly;
- Stir hot milk into flour mixture and cook, stirring constantly, until thickened and smooth;
- Cook 2 minutes longer to thicken;
- Season with salt and pepper. Add chopped shrimp and cook over low heat until heated through;
- Fold whipped cream into sauce;
- Place hot cauliflower on hot serving dish and pour sauce over it. Decorate with whole shrimp and dill.
