How to make it

  • First step is to season the chicken breasts with your favorite brand of Mexican Seasoning then bake in a 375 degree oven for about 35 minutes or until done. I baste my chicken with chicken broth during the baking to add more flavor. While the chicken breasts are baking, prepare the other ingredients. After the chicken breasts are done, let cool slightly then dice into bit size pieces. Next toss the diced chicken with about a 1/2 cup of the Chipotle Lime Ranch Dressing (or the Ranch Dressing of your choice) to get a nice coatiing of the dressing directly on the chicken.
  • If you prepared the other ingredients, now it is just a matter of putting it all together, add the dressing and toss.

    Judy hon - this is wonderful! Given my repeated success with your other chicken salad recipe (via Jim) - I will certainly be making this very soon. I love all the salad components and the dressing. I love the cojita, red cabbage and avocado - oh my!

    And I agree with Jim - garlic is not an option. Ever. Ha! I love it so much. Great job - and great photo - again. I think I'll share this with the folks at work. Thanks so much! ;-) ~Vickie

    So.. You have more than one chicken Salad up your sleeve....;-)~~ I should have known....LOL This sounds delicious. I love the cotija cheese and the cabbage gives it a nice crunch. I will be trying this soon for sure.... Luv Ya Jim
