Ingredients
  • 1 lg onion; chopped
  • 1 md green bell pepper; chopped
  • 2 md stalks celery; chopped
  • 3 cl garlic; finely chopped
  • 1 ca diced tomatoes; undrained
  • 2 c smoked sausage, cooked; chopped
  • 1 tb parsley flakes
  • 1/2 ts dried thyme
  • 1/2 ts salt
  • 1/4 ts pepper
  • 1/4 ts red pepper sauce
  • 3/4 lb uncooked shrimp, medium; peeled, deveined
  • 4 c hot cooked rice

Directions
  1. Mix all ingredients except shrimp and rice in a slow cooker.
  2. Cover and cook on low heat setting 7-8 hours (or high heat setting 3 to 4 hours) or until vegetables are tender.
  3. Stir in shrimp. Cover and cook on low heat setting about 1 hour longer or until shrimp are pink and firm.
  4. Serve jambalaya with rice.
