Shrimp Jambalaya

- 1 lg onion; chopped shopping list
- 1 md green bell pepper; chopped shopping list
- 2 md stalks celery; chopped shopping list
- 3 cl garlic; finely chopped shopping list
- 1 ca diced tomatoes; undrained shopping list
- 2 c smoked sausage, cooked; chopped shopping list
- 1 tb parsley flakes shopping list
- 1/2 ts dried thyme shopping list
- 1/2 ts salt shopping list
- 1/4 ts pepper shopping list
- 1/4 ts red pepper sauce shopping list
- 3/4 lb uncooked shrimp, medium; peeled, deveined shopping list
- 4 c hot cooked rice shopping list
How to make it
- Mix all ingredients except shrimp and rice in a slow cooker.
- Cover and cook on low heat setting 7-8 hours (or high heat setting 3 to 4 hours) or until vegetables are tender.
- Stir in shrimp. Cover and cook on low heat setting about 1 hour longer or until shrimp are pink and firm.
- Serve jambalaya with rice.
