KEY LIME PARFAITS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Brown Estate in Wylie, Texas in 1988.

Ingredients
  • 3 tablespoons unsalted butter
  • 3 tablespoons granulated sugar
  • 1/2 cup graham cracker crumbs
  • 1 can sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 tablespoon grated lime peel
  • 1 cup chilled whipped cream

Directions
  1. Melt butter in heavy small skillet over medium heat.
  2. Mix in sugar and stir until bubbling about 1 minute.
  3. Mix in crumbs then stir until color deepens about 3 minutes.
  4. Turn out onto plate and cool.
  5. In large bowl mix condensed milk, juice and peel to blend.
  6. Beat mixture until firm peaks form then fold into lime mixture.
  7. Place 1/4 cup of mixture into 8 wine goblets and top each with 1 tablespoon crumb mixture.
  8. Top with 1/4 cup mixture then top with whipped cream and crumbs.
