How to make it

  • Cut aubergine slices in thin strips, sprinkle with salt and put in a colander, put a plate on top with something heavy to press as much liquid out as possible and set aside.
  • In a dry frying pan roast coriander seeds till they start smelling and make powder of it in a mortar.
  • From the lime shred 1 ts of the skin and press the juice out.
  • In the blender mix lime juice,garlic, ginger, shallots, pepper slices and lime rind till you have a spicy paste, ( using less or more pepper you make the paste less or more spicy).
  • Dry aubergine strips with kitchen paper, heat 4 tbs olive oil in a frying pan and stir fry aubergines on medium heat 10 min, add spicy paste and 100 ml water, cook on low 15 min, taste with salt and pepper.
  • Brush steaks with 1 tbs olive oil, heat grillpan to medium heat and grill steaks 2-3 min on each side, taste with salt and pepper.
  • Serve steaks with the aubergine and top with koriander.
