Sauerkraut Cake

- 2/3 cup butter shopping list
- 1 1/2 cup sugar shopping list
- 1 teaspoon vanilla shopping list
- 3 eggs shopping list
- 1/2 cup cocoa shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 2 1/4 cups flour -- sifted shopping list
- 1 cup water shopping list
- 2/3 cup sauerkraut -- drained thoroughly rinsed and chopped shopping list
- ***cocoa butterCREAM FROSTING*** shopping list
- 3/4 cup cocoa shopping list
- 1 pinch salt shopping list
- 2 cups powdered sugar shopping list
- 1/2 cup butter shopping list
- 1 teaspoon vanilla shopping list
- 3/4 cup whipping cream shopping list
How to make it
- Preheat oven to 325°F.
- Grease and flour 3 (8-inch) cake pans.
- Cream butter and sugar until smooth. Add vanilla and eggs, one at a time.
- Sift dry ingredients together and add alternately with water. Mix well.
- Fold in drained sauerkraut.
- Turn into cake pans. Bake in preheated oven for approximately 30 minutes or until cake springs back at the touch.
- Remove from pans immediately, cool on a rack, then frost with
- Cocoa Buttercream Frosting.
- COCOA BUTTERCREAM FROSTING:
- Combine cocoa, salt, and sugar.
- Cream butter and vanilla. Add cream. Combine the sugar mixture and cream mixture a little at a time, then beat 2 minutes at high speed with an electric mixer.
- Spread on cooled cake.
