Chicken Taco Cups

Great Mexican flavor in a bite sized cup
Ingredients
- 1 lb. boneless, skinless chicken breasts, cut into 1 inch pieces shopping list
- 1 envelope taco seasoning shopping list
- olive oil shopping list
- 1 small onion, chopped shopping list
- 1 -16 oz. jar salsa, divided shopping list
- 2 cups mexican cheese blend shopping list
- 36 won ton wrappers shopping list
- sour cream and chopped green onions to garnish shopping list
How to make it
- Preheat oven to 375
- Coat chicken with taco seasoning
- Heat olive oil in skillet over medium high heat
- Add chicken and stir until juices run clear, about 5 minutes
- Put cooked chicken in a food processor and process until chopped
- In mixing bowl, add chicken, onion, half of salsa and 1 cup cheese and mix until blended
- Press won ton wrappers into greased mini muffin tins
- Bake 5 minutes or until light brown
- Spoon a rounded tablespoonful of chicken mixture into won ton cups
- Top with remaining salsa then cheese
- Bake 15 minutes or so until warmed through
- Garnish with sour cream and onions
