Ingredients

1 lb. boneless, skinless chicken breasts, cut into 1 inch pieces

1 envelope taco seasoning

olive oil

1 small onion, chopped

1 -16 oz. jar salsa, divided

2 cups Mexican cheese blend

36 won ton wrappers

Sour cream and chopped green onions to garnish

Directions

Preheat oven to 375

Coat chicken with taco seasoning

Heat olive oil in skillet over medium high heat

Add chicken and stir until juices run clear, about 5 minutes

Put cooked chicken in a food processor and process until chopped

In mixing bowl, add chicken, onion, half of salsa and 1 cup cheese and mix until blended

Press won ton wrappers into greased mini muffin tins

Bake 5 minutes or until light brown

Spoon a rounded tablespoonful of chicken mixture into won ton cups

Top with remaining salsa then cheese

Bake 15 minutes or so until warmed through

Garnish with sour cream and onions
