Madras Roasted Banana With Orange Blossom Water And Pistachios Recipe

Was experimenting and came up with this Indian inspired dessert. Madras Curry Powder recipe adapted from recipezaar.com - I've included it here but will post this separately as well.

Ingredients
  • 2 Ripe bananas - peeled and sliced length-wise
  • 2 Tbsp honey
  • 1/4 cup pistachios - shelled and coarsely chopped
  • 2 tsp Orange Blossom Water (or Rose Water will work)
  • Salt
  • 2 Tbsp brown sugar
  • 1/2 tsp Madras Curry powder:
  • For the curry powder: 8 tsp coriander seeds
  • 6 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp fennel seed
  • 4 tsp ground cinnamon
  • 8 tsp peppercorns
  • 1 tsp ground nutmeg
  • 1 tsp whole cloves
  • 2 tsp ground green cardamom
  • 2 tsp turmeric
  • 2 tsp ground ginger
  • 1 tsp cayenne (or less if less heat is desired)

Directions
  1. Preheat the oven to 425 degrees.
  2. For the curry powder, dry roast the seeds on med-high heat in a skillet for about 2 minutes or until half of the seeds pop. (You may want to use a splatter guard for this) Add the remaining spices and heat until fragrant - another minute or so. Transfer to a spice grinder or mortar and grind into a fine powder. *This makes more than required for this recipe but it keeps in a tightly sealed jar for several months.
  3. Spray a foil-lined baking sheet with non-stick spray and arrange the bananas on the sheet.
  4. Sprinkle each with curry powder, pinch of salt, brown sugar and pistachio pieces.
  5. Drizzle with Orange Blossom Water and honey and bake for 15 minutes or until sugar is bubbly.
  6. Serve warm with a quenelle of Mango Lassie Sorbet or your favourite frozen yogurt.

Alterations


I made this again this weekend but drizzled some clarified butter (ghee) over the top before baking them. Decadent but wicked. **Be sure to let them cool slightly before serving because it's darn hot straight out of the oven.
