Ingredients
  • 1 cup chopped pecans
  • 2 tablespoons butter
  • 2 packages softened cream cheese (8 oz size)
  • 1 cup sour cream
  • 1/2 teaspoon garlic powder
  • 2 packages dried beef (2 1/2 oz each), chopped
  • 4 teaspoons diced onion (can use chopped green onion)
  • Crackers

Directions
  1. In a skillet, saute pecans in butter until golden; set aside.
  2. In a mixing bowl, beat cream cheese until smooth.
  3. Add sour cream and garlic powder; mix well.
  4. Stir in beef and onion.
  5. Top with pecans.
  6. Bake uncovered at 350 degrees for 20 minutes or until heated through.
  7. Makes 3 1/2 cups of dip

This is very similar to a recipe I made from the Atkins website -minus the pecans & with the additon of green pepper & couple dashes Worchestershire. It was very delicious and many raved -served with soy chips and it's an Atkins delight. My father in law who's not even on the diet LOVED it. The beef jerky was a little time consuming to chop by hand, but the food processor made the task quite easy. I made it both ways in 2 batches and both were delightful.
