  • Oatmeal has all kinds of good soluble fiber in it and my mother’s grandmother at a bowl of it every day and lived to almost 100!
  • I was buying vanilla soy milk from Costco or Sam’s Club all the time in environmentally “happy” non-refrigerated paper cartons. The soy thing is something that you either like or don’t like, but if you don’t have soy milk or don’t like it-just substitute milk here.
  • 3 1/2 cups plain or vanilla soy milk
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1/4 cup pure maple syrup
  • 1/3 cup raisins
  • 1/3 cup dried cranberries
  • 1/3 cup sweetened flaked coconut
  • 1/3 cup chopped walnuts, almonds or any other nut you might like. I used thin sliced almonds which blended nicely with the coconut.
  • 1 (8 ounce) container plain yogurt or any flavored yogurt of your choice
  • 3 tablespoons honey

Directions
  1. Pour the milk and salt into a saucepan, and bring to a boil. Stir in the oats, maple syrup, raisins, and cranberries. Return to a boil, then reduce heat to medium. Cook for 5 minutes. Stir in walnuts and coconut, and let stand until it reaches your desired thickness. Spoon into serving bowls, and top with yogurt and honey, if desired.
  2. Yield: 6 servings
