- For the syrup: shopping list
- 1 can of cherry pie filling shopping list
- 4 ounces (120 grams) 72% dark, single source fair trade chocolate shopping list
- 3/4 cup butter--I use real butter, please don't use margarine; it affects the taste quite a bit shopping list
- 1-1/4 cup sugar shopping list
- 1 teaspoon pure vanilla extract shopping list
- 3 large organic eggs shopping list
- 1/4 cup canola or vegetable oil shopping list
- 1/4 teasoon salt shopping list
- 1-1/2 cup all purpose flour shopping list
- 1 pkg of white chocolate chips shopping list
- vanilla bean ice cream shopping list
How to make it
- Open the can of cherry pir filling, and put in a saucepan on the stove on medium heat to simmer and reduce. Keep an eye on it, and stir faily often as it is reducing, and don't let it boil too aggressively...just above simmer.
- In a large (but not too large for the microwave) microwave-safe bowl, add butter and dark chocolate, and microwave on high for about 1-2 minutes until butter is melted.
- Remove from microwave, and stir until chocolate is completely melted.
- add sugar and stir until smooth
- add vanilla, stir
- add eggs, beat until fully incorporated
- add oil, beat until fully incorporated
- add salt
- add flour, stir with wooden spoon until smooth and creamy
- add white chocolate chips
- pour into a buttered 9"x9"x2" baking pan
- put in oven and bake for 35-45 minutes. The brownies are done when a toothpick stuck in the middle comes out with some moist crumbiness on it, not clean.
- Let brownies cool and then cut into 3" squares
- While the brownies are cooling, mash the cherry-reduction with a potato masher, and then strain the liquid through a strainer and into a clean pot--use a spoon to encourage all the juice through the strainer, but not the skins of the cherries, let the syrup cool thoroughly, and then put into a clean ketchup-type container
- add a still-warm brownie to a dessert plate, spoon a scoop of vanilla-bean ice cream on top, and from the ketchup-bottle type container (new, clean ones are available from your restaurant-supply store, and I use them for everything!), squirt some syrup over the brownie/ice cream, serve and enjoy!
