Grilled Chicken Stuffed With Spinach And Sweet Peppers

- 6 chicken breast halves shopping list
- 1/4 c honey mustard shopping list
- 2 T Dukes real mayo (or what you like) shopping list
- 1 T olive oil shopping list
- 1 T red wine vinegar shopping list
- 1 t dried oregano, crushed shopping list
- 1 t dried basil, crushed shopping list
- 1 t dried rosemary, crushed shopping list
- 1 c finely shredded mozzerella (4 oz) shopping list
- 1 c chopped fresh spinach shopping list
- 1/2 c finely chopped red sweet pepper shopping list
- 1/4 t fresh ground black pepper shopping list
- 3 cloves garlic, minced shopping list
- Rough chopped roma tomatoes (optional) shopping list
How to make it
- Using a small, sharp pointed knife, cut a horizontal packet in each chicken breast by cutting from one side almost to, but not through, the other side
- Place chicken in a slef-sealing plastic bag and set in a shallow dish
- MARINADE
- mix together mustard, mayo, oil, vinegar, and dried herbs
- Pour over chicken Massage until well coated
- Seal and place in fridge
- Marinate 2-4 hours, turning bag occasionally
- Meanwhile, make the stuffing
- STUFFING
- Combine cheese, spinach, sweet pepper, black pepper, and garlic
- CHICKEN
- Bring to room temp just before grilling
- Drain and discard marinade
- Spoon stuffing into pockets
- Flasten with wooden toothpicks if necessary
- Grill on medium about 40-45 minutes, to internal temp of 165/170
- Allow to rest 8 minutes
- Serve with topped with the rough chopped roma tomatoes and another sprinkling of shredded mozzerella or parmesan
- ** I like to serve it over brown rice **
