How to make it

  • Using a small, sharp pointed knife, cut a horizontal packet in each chicken breast by cutting from one side almost to, but not through, the other side
  • Place chicken in a slef-sealing plastic bag and set in a shallow dish
  • MARINADE
  • mix together mustard, mayo, oil, vinegar, and dried herbs
  • Pour over chicken Massage until well coated
  • Seal and place in fridge
  • Marinate 2-4 hours, turning bag occasionally
  • Meanwhile, make the stuffing
  • STUFFING
  • Combine cheese, spinach, sweet pepper, black pepper, and garlic
  • CHICKEN
  • Bring to room temp just before grilling
  • Drain and discard marinade
  • Spoon stuffing into pockets
  • Flasten with wooden toothpicks if necessary
  • Grill on medium about 40-45 minutes, to internal temp of 165/170
  • Allow to rest 8 minutes
  • Serve with topped with the rough chopped roma tomatoes and another sprinkling of shredded mozzerella or parmesan
  • ** I like to serve it over brown rice **
