Ingredients
  • 6 chicken breast halves
  • 1/4 c honey mustard
  • 2 T Dukes real mayo (or what you like)
  • 1 T olive oil
  • 1 T red wine vinegar
  • 1 t dried oregano, crushed
  • 1 t dried basil, crushed
  • 1 t dried rosemary, crushed
  • 1 c finely shredded mozzerella (4 oz)
  • 1 c chopped fresh spinach
  • 1/2 c finely chopped red sweet pepper
  • 1/4 t fresh ground black pepper
  • 3 cloves garlic, minced
  • Rough chopped Roma tomatoes (optional)

Directions
  1. Using a small, sharp pointed knife, cut a horizontal packet in each chicken breast by cutting from one side almost to, but not through, the other side
  2. Place chicken in a slef-sealing plastic bag and set in a shallow dish
  3. MARINADE
  4. mix together mustard, mayo, oil, vinegar, and dried herbs
  5. Pour over chicken Massage until well coated
  6. Seal and place in fridge
  7. Marinate 2-4 hours, turning bag occasionally
  8. Meanwhile, make the stuffing
  9. STUFFING
  10. Combine cheese, spinach, sweet pepper, black pepper, and garlic
  11. CHICKEN
  12. Bring to room temp just before grilling
  13. Drain and discard marinade
  14. Spoon stuffing into pockets
  15. Flasten with wooden toothpicks if necessary
  16. Grill on medium about 40-45 minutes, to internal temp of 165/170
  17. Allow to rest 8 minutes
  18. Serve with topped with the rough chopped roma tomatoes and another sprinkling of shredded mozzerella or parmesan
  19. ** I like to serve it over brown rice **
