Ingredients
  • 3 pound whole salmon, cleaned
  • 1/4 cup soy sauce
  • 1 tablespoon chile sauce
  • 1 tablespoon fresh ginger root, chopped
  • 1 clove garlic, chopped
  • 1 lime, juiced AND zested
  • 1 tablespoon brown sugar
  • 3 green onions, chopped

Directions
  1. Prepare outdoor grill for high heat.
  2. Trim the tail and fins off the salmon.
  3. Make several shallow cuts across the salmon's skin.
  4. Place salmon on 3 large, slightly overlapping sheet of aluminum foil.
  5. Stir together soy sauce, chile sauce, ginger and garlic in small bowl.
  6. Mix in lime juice, zest and brown sugar.
  7. Spoon sauce over salmon.
  8. Fold foil over the salmon and crimp edges to seal.
  9. IF USING COALS, move them to one side of the grill.
  10. Place fish on side of frill with no coals underneath and close the lid.
  11. IF USING GAS, place the fish on 1 side and turn off flame beneath it.
  12. Close the lid.
  13. Cook for 25 to 30 minutes.
  14. Remove to a serving platter.
  15. Pour accumulated juices over fish.
  16. Sprinkle with green onions.
