Mexican Corn Chowder Recipe
This is a recipe I got from my Mother-in-Law. A great meal for a cold day. Filling and flavorful.

Ingredients
  • 2 C raw cubed Chicken
  • 1/2 C diced onion
  • 2 cloves Minced garlic
  • 1 can Chicken broth
  • 1 tsp ground cumin
  • 1 pint half and half
  • 1 1/2 C mexican blend grated cheese
  • 15 oz can shoe peg corn
  • 4 oz can chopped green chillies
  • hot pepper sauce to taste
  • fritoes corn chips
  • sour cream
  • mexican blend cheese

Directions
  1. Combine chicken, onion, and garlic in a pan on stove top.
  2. Sautee until brown and cooked through.
  3. Add chicken broth and cumin.
  4. Bring to a boil then reduce heat and simmer for 5 minutes.
  5. Add 1/2 & 1/2, cheese, corn, chillies, & pepper sauce.
  6. Cook until heated through
  7. Serve topped with corn chips, cheese and sour cream.
