Like those cupcakes with the white squiggle's on top?....You'll love these.

Ingredients
  • Cake
  • 1 box chocolate cake mix and the ingredients to make it ( I use Duncan Hines Chocolate Fudge)
  • Filling
  • 2 tsp. hot water
  • 1/4 tsp. salt
  • 1-7 oz. jar of marshmallow creme
  • 1/2 cup shortening
  • 1/3 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • Ganache Frosting
  • 1 cup semisweet chocolate chips
  • 3/4 cup heavy cream

Directions
  1. Prepare and bake cupcakes according to pkg. directions, using paper lined muffin cups
  2. Cool completely
  3. Filling
  4. Add water and salt to cup and let sit to dissolve salt
  5. Cool
  6. In mixing bowl, add marshmallow creme, shortening, powdered sugar and vanilla and beat until light
  7. and fluffy
  8. Add salt mixture and beat just to combine
  9. Put a small round pastry tip into a pastry or plastic bag and fill with cream filling
  10. Insert the tip halfway into top center of cupcake and fill with cream filling
  11. Ganache Frosting
  12. In double boiler, melt chocolate chips
  13. Add cream and stir until blended
  14. Cool And dip cupcake tops into frosting
  15. Chill 20 minutes or so to set frosting
  16. Store in refrigerator

Have you ever tried any other type of filling in these? I have seen other filled cupcake recipes before and one day I will give them a try. Just haven't gotten around to it yet. Are they fairly easy to do?
