Ethopian Ginger Vegetables

- 5 green chilies skinned seeded and chopped shopping list
- 1 teaspoon fresh ginger grated shopping list
- 6 small potatoes cubed shopping list
- 1/2 pound fresh green beans shopping list
- 4 carrots cut into strips shopping list
- water shopping list
- 2 medium white onions quartered and separated shopping list
- 2 tablespoons olive oil shopping list
- 2 cloves garlic shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Place potatoes, green beans and carrots into boiling salted water.
- Cover and cook 5 minutes then remove vegetables and rinse.
- Sauté chilies and onion in oil until soft but not brown.
- Add ginger, garlic, salt and pepper then sauté 5 minutes.
- Add remaining ingredients then stir well and cook over medium heat until veggies are tender.
