How to make it

  • Heat a HEAVY PAN on medium
  • In a seperate pan heat some olive oil with the garlic,,, do not burn garlic.
  • Use a brush and apply olive oil to 1 side of the bread
  • Place in heavy pan, oil side down
  • Top with choice of cheese
  • Top with choice of meat
  • Top with tomato and basil..
  • sprinkle a LITTLE salt and pepper on tomato
  • Finish by putting last slice of bread and brushing with olive oil.
  • Cook on Medium or slow so the cheese melts, and the meat warms. You might have to flip a couple of times...
  • Now that is a ADULT grilled cheese! No kids stuff!
  • Enjoy

How funny that my lunch yesterday was a dressed up grilled cheese, brie on sourdough with a slice of tomato. Daughter had havarti, gouda, and cheddar and tomato on rye. The restaurant was celebrating it's one year anniversary and it was packed. They even had tomato, fresh mozzarella and basil on foccacia. Would have been much cheaper to make at home, but we were on the homecoming dress hunt and needed sustanance.

Bookmarked this one! Love my grilled cheese dipped in tomato soup. We also dip them in ketchup to. Some may think we're strange, and they're right, we are....

My family loves grilled cheese, too. BTW, butter flavor Pam makes wonderful grilled cheese without any butter or oil, nice and crispy.
