  • 1 large can of tuna or crab
  • 2 eggs
  • Optional seasonings: ¼ cup minced onion
  • ½ teaspoon lemon pepper or ½ teaspoon Mrs. Dash is good too
  • Ritz crackers or seasoned breadcrumbs like garlic or Italian
  • *********************************************************************
  • Ritz crackers-a couple handfuls made into crumbs in a plastic bag and then rolled with a rolling pin
  • (Or you can use garlic seasoned breadcrumbs which works really well. Just add enough so that it blends with the egg and holds the shape of the patty in your hands.
  • (You can tell by the “feel” as I was telling a friend on here this afternoon. You want the patties to hold their shape but not be too wet nor fall apart from being too dry either. The more you make em’ the better you’ll get at it.)

Directions
  1. 1. Shape into small patties that will fit in the palm of your hand. Lay all the patties out on a plate and slide them in a non-stick skillet with a few tablespoons oil in the pan on medium/high heat. Cook the tuna patties about 5 minutes or so on each side or more, until they are browned and done on each side. It depends on how many crackers you added to the patties and how hot your skillet is.
  2. 2. Serve on dinner plates and serve with ketchup, barbecue sauce or tartar sauce, whichever you like.
  3. You can double this recipe, make them up ahead of time and then freeze them or store in the meat tender for easy, healthy lunches.

OK Guys, I made 2 batches to test the difference and taste. I used a small can of tuna and a small can of salmon dividing the other ingredients between the two. The flavors are different but they are both wonderful. I can't really say which one I like best. You all need to try this test yourself. I don't think you will be disappointed.

Alterations


After watching good old Alton Brown on The Food Network's Good Eats-I saw him do some Tuna Croquettes which were rolled in Japanese Panko Bread Crumbs. I have some Ean's brand panko bread crumbs in the kitchen too.

Just make the Tuna Patties as directed then roll them on some panko bread crumbs before pan frying in a little bit of oil.
