I adapted this a little from Emeril Lagasse's recipe, namely I cut the ingredients in half and left out some ingredients. It is very nice and child friendly this way. It tastes like a more subtle and less tangy but MUCH more flavorful scampi.

Ingredients
  • 8 oz linguine
  • 10 oz shrimp; peeled & deveined
  • 1 teaspoon Old Bay Seasoning
  • 4 tablespoons butter
  • 1/2 tablespoon garlic; minced
  • 1/4 cup dry white wine
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt; + more in pasta water
  • ground black pepper; as needed

Directions
  1. Bring a large pot of salted water to a boil and cook the linguine per box instructions.
  2. While the pasta is cooking, toss the shrimp with the Creole seasoning in a medium bowl.
  3. Place 2 tablespoons of the butter in a large skillet set over high heat.
  4. Add the shrimp, spreading them evenly in one layer.
  5. Cook for 2 minutes, and then turn them to the other side.
  6. Add the garlic and cook for 30 seconds.
  7. Add the wine, lemon juice, and 1 tablespoon of the remaining butter, and cook for 1 1 /2 minutes.
  8. Season the shrimp with salt and the black pepper.
  9. Drain the pasta, reserving 1 /4 cup of the cooking water.
  10. Add the pasta and reserved cooking water to the sauce in the skillet.
  11. Toss until everything for about 1 minute.
  12. Remove the skillet from the heat, add the remaining tablespoon butter and toss to combine.
  13. Serve hot.
