How to make it

  • Peel onions and cut in half horizontally;
  • steam in colander over boiling water for about 12 minutes or until tender but not soft and mushy. You want an onion cup to stuff.
  • Cool; remove the center of the onions and dice.
  • Leave shells intact.
  • Wash spinach and cook for one minute; using only the water that clings to the leaves.
  • Drain and chop.
  • Saute spinach and chopped onion in melted butter.
  • Add half and half, beef base and seasoning.
  • Cook until most liquid evaporates.
  • You want it fairly dry, not soupy.
  • Fill onion shells with spinach mixture.
  • Sprinkle generously with cheese.
  • Bake in greased shallow pan at 350 degrees until piping hot and thoroughly heated, about 15-20 minutes.
