Courtesy of vanillagarlic at BakeSpace, we are told that armagnac OR cognac will do and apricots may be substituted for the dried plums. No yield is given in the recipe so I guessed! Prep time includes "plumping" time.

  • CUPCAKES:
  • 8 ounce bar 61% cacao chocolate
  • 3 sticks unsalted butter, room temperature
  • 2 1/4 cups sugar
  • 8 eggs, room temperature
  • 1 1/4 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 1/2 pound dried plums (preferable unsulphured) OR apricots
  • Bottle of good cognac OR armagnac
  • GANACHE with WALNUTS:
  • 4 ounces semisweet chocolate
  • 5 ounces bittersweet chocolate
  • 1 cup heavy whipping cream
  • 2 tablespoons unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • Shelled walnuts

Directions
  1. CUPCAKES:
  2. Chop the plums OR apricots and place in non-reactive bowl.
  3. Cover fruit with liquor and let plump overnight.
  4. Preheat oven to 350 degrees F..
  5. Melt chocolate and butter over a water bath.
  6. Add sugar and stir; let sit for about 10 minutes.
  7. Beat with an electric mixer for 3 minutes.
  8. Add one egg at a time, mixing for 30 seconds between each addition.
  9. Sift in dry ingredients.
  10. Mix until just blended.
  11. Drain the fruit and lightly pat them dry.
  12. Fold into batter.
  13. Scoop into cupcake papers.
  14. Bake for 20 to 24 minutes OR until toothpick comes out clean.
  15. GANACHE:
  16. Chop chocolates and transfer to a heat proof bowl.
  17. Heat cream in a saucepan until bubbles form around edge of pan.
  18. Pour cream over chocolate.
  19. Let sit for 1 minutes and then stir until combined.
  20. Add butter and vanilla and stir until combined.
  21. Transfer to bowl of electric mixer and let cool for 10 minutes.
  22. Sift powdered sugar in and mix until combined.
  23. Continue to beat until creamy and light in color.
  24. Spread OR pipe ganache onto cupcakes.
  25. Top with walnuts.
