Ginger Eggplant

- 1 large eggplant (Italian, not Japanese) shopping list
- salt shopping list
- 1/2 c dark soy sauce shopping list
- 4 Tbsp mirin shopping list
- 1 Tbsp shredded fresh ginger shopping list
How to make it
- Peel the eggplant, and cut into circles 1/4" wide.
- Cut each circle into 1/4" strips.
- Sprinkle with salt and let stand for 30 minutes to allow the liquid to draw out.
- After 30 minutes, drain and dry with paper towels.
- Combine, soy sauce, mirin, and ginger.
- Marinate eggplant for 3 hours.
- After teh eggplant has marinated, place it and the marinade in a shallow pan.
- Broil (in a preheated broiler) for 5-7 minutes. (or up to 12 minutes if you prefer it softer)
