How to make it

  • Peel the eggplant, and cut into circles 1/4" wide.
  • Cut each circle into 1/4" strips.
  • Sprinkle with salt and let stand for 30 minutes to allow the liquid to draw out.
  • After 30 minutes, drain and dry with paper towels.
  • Combine, soy sauce, mirin, and ginger.
  • Marinate eggplant for 3 hours.
  • After teh eggplant has marinated, place it and the marinade in a shallow pan.
  • Broil (in a preheated broiler) for 5-7 minutes. (or up to 12 minutes if you prefer it softer)
