Pumpkin Pancakes

- 1 1/4 cups all-purpose flour shopping list
- 1 tablespoon baking powder shopping list
- 1 tablespoon granulated sugar shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/4 teaspoon ground ginger shopping list
- 1 cup milk shopping list
- 2 eggs shopping list
- 1 cup canned pumpkin shopping list
- 1/4 cup vegetable oil shopping list
How to make it
- In a medium bowl, sift together all the dry ingredients
- In another bowl combine milk, eggs, pumpkin and oil; beat until well mixed
- Add pumpkin mixture to flour mixture; stir until just mixed;batter will be quite thick (see note)
- Preheat griddle
- For each pancake, spoon about 1/4 cup batter onto griddle;flatten into a 1/4 inch thick round
- Cook over medium-high heat until bubbles form on the top, then turn and cook other side until browned
- Serve immediately, or keep warm in the oven until you have a platter full to serve
- NOTE: The thickness of the batter may surprise you. It doesn't pour at all, but if you add more liquid, the pumpkin flavor becomes diluted.
