How to make it

  • In a medium bowl, sift together all the dry ingredients
  • In another bowl combine milk, eggs, pumpkin and oil; beat until well mixed
  • Add pumpkin mixture to flour mixture; stir until just mixed;batter will be quite thick (see note)
  • Preheat griddle
  • For each pancake, spoon about 1/4 cup batter onto griddle;flatten into a 1/4 inch thick round
  • Cook over medium-high heat until bubbles form on the top, then turn and cook other side until browned
  • Serve immediately, or keep warm in the oven until you have a platter full to serve
  • NOTE: The thickness of the batter may surprise you. It doesn't pour at all, but if you add more liquid, the pumpkin flavor becomes diluted.
