How to make it

  • Cake:
  • Sift together flour, baking powder, soda, salt, and cinnamon. Set aside.
  • In a large mixing bowl, combine oil, eggs, buttermilk, sugar, and vanilla. Beat until smooth.
  • Stir in carrots, pineapple, coconut, and nuts.
  • Pour batter into two deep greased and floured 9" cake pans or three 9" regular cake pans.
  • Bake at 350 degrees for 35-40 minutes or until done.
  • Buttermilk Glaze:
  • In a medium saucepan, combine sugar, soda, buttermilk, and corn syrup.
  • Bring to a boil and cook for 4 minutes,stirring constantly.
  • Remove from heat and stir in vanilla.
  • Pour over layers as soon as they come out of the oven.
  • Cool in pans for 15 minutes then turn out onto wire racks and cool completely.
  • Frosting:
  • In a large mixing bowl, combine cream cheese and butter. Beat until smooth. Add vanilla, orange zest and juice.
  • Gradually add powdered sugar. Beat until smooth and spreadable.
  • Frost layers and store in refrigerator.
