Lamb and green chile stew

- 1 pound boneless lean lamb cubed shopping list
- 1 large onion halfed and sliced shopping list
- 2 cans{15oz.} whole tomatoes undrained shopping list
- 1 pound peeled potatoes peeled shopping list
- 3 cans (4 0z. each}diced mild green chilies shopping list
- 2 Teaspoons dried rosemary leaves CRUSHED shopping list
- 1 POUND ZUCHINNI shopping list
- 1 CUP FORZEN whole corn THAWED DRAINED shopping list
- pickled jalepeno peppers {Optional} shopping list
- 1 Tsp. dried oregano leaves crushed shopping list
How to make it
- Combimed 1 1/2 cup water Lamb onion and garlic in large saucepan Bring to simmer over medium high heat.
- Cove simmer for 30 minutesor untill onion is tender Increase heat to high uncover
- Boil stirring ocassioally untill liquid evaporates and browns Add tomatoes with liquidstir. Reduce heat to medium low cover simmer 30 more minutes
- Meanwhile cut potatoes into 1 1/2 cubes Add potatoes chilies rosemary and oregano. cover simmer 20-30 minutes or untill potatoes and Lamb are tender.Halve zuchinni lengthwise and cut croswise into 1 1/2 chunks ADD ZUCHINNI AND CORN TO STEW COVER SIMMER 10 MINUTES OR TILL ZUCHINI IS CRISP-TENDER
- SEASON WITH PEPPER GARNISH WITH jalepenos
