Ingredients
  • 1 pound boneless lean Lamb cubed
  • 1 large onion halfed and sliced
  • 2 cans{15oz.} whole tomatoes undrained
  • 1 pound peeled potatoes peeled
  • 3 cans (4 0z. each}diced mild green chilies
  • 2 Teaspoons dried ROSEMARY LEAVES CRUSHED
  • 1 POUND ZUCHINNI
  • 1 CUP FORZEN WHOLE CORN THAWED DRAINED
  • Pickled jalepeno peppers {Optional}
  • 1 Tsp. dried oregano leaves crushed

Directions
  1. Combimed 1 1/2 cup water Lamb onion and garlic in large saucepan Bring to simmer over medium high heat.
  2. Cove simmer for 30 minutesor untill onion is tender Increase heat to high uncover
  3. Boil stirring ocassioally untill liquid evaporates and browns Add tomatoes with liquidstir. Reduce heat to medium low cover simmer 30 more minutes
  4. Meanwhile cut potatoes into 1 1/2 cubes Add potatoes chilies rosemary and oregano. cover simmer 20-30 minutes or untill potatoes and Lamb are tender.Halve zuchinni lengthwise and cut croswise into 1 1/2 chunks ADD ZUCHINNI AND CORN TO STEW COVER SIMMER 10 MINUTES OR TILL ZUCHINI IS CRISP-TENDER
  5. SEASON WITH PEPPER GARNISH WITH jalepenos
  6. Makes 6 servings
