Ingredients
  • 7 medium Idaho potatoes -- cooked
  • 1 medium white onions -- diced
  • 1/3 cup olive oil
  • 2 plum tomatoes -- diced
  • 1 hot chili pepper -- diced
  • 1/2 teaspoon black pepper
  • salt
  • corn oil
  • 16 corn tortillas

Directions
  1. Boil the potatoes whole, skins on, until soft but not mushy. Rinse under cold water, peel, and mash with the back of a fork. They should be lumpy. Heat the olive oil in a frying pan. Add the onion and pepper and sauté 3 minutes. Add the potato, tomato, and seasonings and sauté an additional 5 minutes.
  2. Remove from heat. Heat about an inch of corn oil in a frying pan on medium high. Divide the potato mixture into the 16 corn tortillas. Wrap tightly and secure with wooden toothpicks. Fry in the oil on both sides until crisp.
  3. Serve with salsa or guacamole & crema
