Potato Flautas

- 7 medium idaho potatoes -- cooked shopping list
- 1 medium white onions -- diced shopping list
- 1/3 cup olive oil shopping list
- 2 plum tomatoes -- diced shopping list
- 1 hot chili pepper -- diced shopping list
- 1/2 teaspoon black pepper shopping list
- salt shopping list
- corn oil shopping list
- 16 corn tortillas shopping list
How to make it
- Boil the potatoes whole, skins on, until soft but not mushy. Rinse under cold water, peel, and mash with the back of a fork. They should be lumpy. Heat the olive oil in a frying pan. Add the onion and pepper and sauté 3 minutes. Add the potato, tomato, and seasonings and sauté an additional 5 minutes.
- Remove from heat. Heat about an inch of corn oil in a frying pan on medium high. Divide the potato mixture into the 16 corn tortillas. Wrap tightly and secure with wooden toothpicks. Fry in the oil on both sides until crisp.
- Serve with salsa or guacamole & crema
