Baking Addict at allrecipes says that this is "a delicious, tropical coconut flan~~ authentically Caribbean"! Sounds good to me. Cook time includes overnight refrigeration period.

Ingredients
  • 1 1/2 cups white sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup milk
  • 6 eggs
  • 1/2 cup fresh shredded coconut

Directions
  1. Preheat oven to 350 degree F/175 degrees C..
  2. Place 1 cup sugar in a saucepan over medium heat.
  3. Cook gently, without stirring but shaking occasionally until sugar is melted.
  4. Continue cooking until sugar is completely melted and turns golden brown.
  5. Pour into a large glass baking dish.
  6. Spread caramel evenly over bottom of dish, then set aside to cool for about 15 minutes.
  7. Once the caramel has hardened pour all the milks, the eggs, 1/2 cup sugar and coconut into a blender.
  8. Blend for 3 minutes or until smooth.
  9. Pour into baking dish over caramel.
  10. Bake for 45 minutes until set.
  11. Remove from oven and cool 30 minutes.
  12. Run a knife around the edge of the dish to free flan from sides.
  13. Refrigerate overnight before serving.
