How to make it

  • Preheat oven to 350 degree F/175 degrees C..
  • Place 1 cup sugar in a saucepan over medium heat.
  • Cook gently, without stirring but shaking occasionally until sugar is melted.
  • Continue cooking until sugar is completely melted and turns golden brown.
  • Pour into a large glass baking dish.
  • Spread caramel evenly over bottom of dish, then set aside to cool for about 15 minutes.
  • Once the caramel has hardened pour all the milks, the eggs, 1/2 cup sugar and coconut into a blender.
  • Blend for 3 minutes or until smooth.
  • Pour into baking dish over caramel.
  • Bake for 45 minutes until set.
  • Remove from oven and cool 30 minutes.
  • Run a knife around the edge of the dish to free flan from sides.
  • Refrigerate overnight before serving.
