Banana Loaf Bake-off

- banana Bran Loaf- 'Savor the flavor of an all-time favorite with the added benefit of oat bran.' shopping list
- 1 cup mashed ripe bananas (about 2 large) shopping list
- 1/2 cup sugar shopping list
- 1/3 cup liquid vegetable oil margarine shopping list
- 2 egg whites (or 1 egg) shopping list
- 1/3 cup skim milk shopping list
- 1 1/4 cups all-purpose flour shopping list
- 1 cup quaker oat Bran hot cereal, uncooked (I used finely milled oat bran purchased at an amish store, also available at a health food store) shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- (opt. Dr. Oetker brand vanilla sugar) shopping list
How to make it
- Heat oven to 350*F. Lightly grease 8 by 4-inch or 9 by 5-inch loaf pan with vegetable oil cooking spray or oil lightly. (I use a polish pottery bowl 7" round by 2 3/4" deep.) Combine bananas, sugar, margarine, egg whites, and milk; mix well. Add combined flour, oat bran, baking powder and baking soda, mixing just until moistened. Pour into prepared pan. Bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove to wire rack. Cool completely. Makes 16 servings.
- Tips: TO FREEZE BREAD SLICES: layer waxed paper between each slice of bread. Wrap securely in foil or place in freezer bag. Seal, label and freeze. TO REHEAT BREAD SLICES; Unwrap frozen bread slices; wrap in paper towel. Microwave at HIGH about 30 seconds for each slice, or until warm.
