How to make it

  • Heat oven to 350*F. Lightly grease 8 by 4-inch or 9 by 5-inch loaf pan with vegetable oil cooking spray or oil lightly. (I use a polish pottery bowl 7" round by 2 3/4" deep.) Combine bananas, sugar, margarine, egg whites, and milk; mix well. Add combined flour, oat bran, baking powder and baking soda, mixing just until moistened. Pour into prepared pan. Bake 55 to 60 minutes or until wooden toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove to wire rack. Cool completely. Makes 16 servings.
  • Tips: TO FREEZE BREAD SLICES: layer waxed paper between each slice of bread. Wrap securely in foil or place in freezer bag. Seal, label and freeze. TO REHEAT BREAD SLICES; Unwrap frozen bread slices; wrap in paper towel. Microwave at HIGH about 30 seconds for each slice, or until warm.

    You can sprinkle vanilla sugar over the top before baking.
