Triumphant Baked Beans Recipe
TRIUMPHANT BAKED BEANS This recipe came from my mother in law who was not only the best gardener I ever knew but one of the best bakers. This was one of her recipes that I treasure dearly.

Ingredients
  • 2 cups navy beans
  • 1-1/2 teaspoons salt
  • 2 tablespoons brown sugar
  • 1/4 cup molasses
  • 1 bay leaf
  • 1/2 teaspoon dry mustard
  • 1 tablespoon chopped onion
  • 1 cup boiling water
  • 1/2 pound salt pork

Directions
  1. Wash beans and discard any imperfect ones then cover with water and soak overnight.
  2. Drain well and cover with large amount of boiling salted water and boil slowly for 1 hour.
  3. Drain well then combine salt, sugar, molasses, bay leaf, mustard, onion and water.
  4. Add to beans then pour into bean pot.
  5. Score rind of pork and press into beans leaving rind exposed.
  6. Cover beans with additional boiling water and bake at 300 for 4 hours.
  7. Remove cover for last hour of cooking.
