Pork Marrakesh

- 2 tsp olive oil shopping list
- 4 (1/4 lb) boneless pork chops, trimmed shopping list
- 3/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 3 small red onions, thinly sliced shopping list
- 12 dried apricots, sliced shopping list
- 3/4 C unsweetened apple juice shopping list
- 2 tsp minced, peeled fresh ginger shopping list
- 1/2 tsp thyme shopping list
- 1 ( inch) cinnamon stick shopping list
- 1/4 C chopped fresh cilantro or parsley shopping list
How to make it
- Heat 1 tsp oil in a large skillet over medium high heat
- Sprinkle the chops with 1/4 tsp salt and pepper
- Add the chops to the skillet and cook until browned, about 2 minutes on each side and transfer to a plate
- Reduce the heat to medium and add the onions, the remaining 1 tsp oil and the remaining 1/2 tsp salt to the skillet
- Cook, stirring, until the onions are golden, about 10 minutes
- Place half the apricots and half the onion in the bottom of a slow cooker
- Top with the chops and remaining apricots and onions
- Add the apple juice, ginger, thyme and cinnamon stick
- Cover and cook until the pork in tender, 3-4 hours on high or 6-8 hours on low
- Remove the cinnamon stick and serve sprinkled with cilantro or parsley
