Ingredients
  • 2 tsp olive oil
  • 4 (1/4 lb) boneless pork chops, trimmed
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 3 small red onions, thinly sliced
  • 12 dried apricots, sliced
  • 3/4 C unsweetened apple juice
  • 2 tsp minced, peeled fresh ginger
  • 1/2 tsp thyme
  • 1 ( inch) cinnamon stick
  • 1/4 C chopped fresh cilantro or parsley

Directions
  1. Heat 1 tsp oil in a large skillet over medium high heat
  2. Sprinkle the chops with 1/4 tsp salt and pepper
  3. Add the chops to the skillet and cook until browned, about 2 minutes on each side and transfer to a plate
  4. Reduce the heat to medium and add the onions, the remaining 1 tsp oil and the remaining 1/2 tsp salt to the skillet
  5. Cook, stirring, until the onions are golden, about 10 minutes
  6. Place half the apricots and half the onion in the bottom of a slow cooker
  7. Top with the chops and remaining apricots and onions
  8. Add the apple juice, ginger, thyme and cinnamon stick
  9. Cover and cook until the pork in tender, 3-4 hours on high or 6-8 hours on low
  10. Remove the cinnamon stick and serve sprinkled with cilantro or parsley

Mmmm, sounds so good! I'm always looking for new ways to prepare pork (and new recipes for my beloved slow cooker, as you know)! But isn't pork a big no-no in Marrakesh?
