Spicy Chipotle Sliders Recipe

Ingredients

CHIPOTLE MAYONNAISE:

1/2 cup mayonnaise

1 tablespoon chopped chipotle peppers in adobo sauce

1/2 tablespoon adobo sauce

1 teaspoon fresh lime juice

1/2 teaspoon lime zest

Salt and pepper to taste

SLIDERS:

1 1/4 pounds ground sirloin

2 tablespoons chipotle peppers in adobo sauce, minced

2 tablespoons steak sauce

1/4 cup minced onion

1/2 teaspoon ground cumin

1 package small rolls(Hawaiian are best)

Pepper Jack cheese

Directions

TO MAKE MAYO:

Combine mayo, peppers, adobo sauce and lime juice in a food processor and puree until smooth(if you don't have a food processor just use a blender)

Stir in lime zest, salt and pepper

Cover and place in fridge

MINI BURGERS:

Combine beef, peppers, onion and cumin

Shape into ten 5 inch patties

Cook on grill over medium high heat 2-3 minutes on each side for medium doneness

When almost done, place cheese on burgers and cover, then cook until cheese has melted

Place burgers on mini rolls and serve with chipotle mayo, and burger bar fixings
