Slice And Bake Pecan Shortbread Recipe
This is a recipe Ive been making for a long time from Southern Living... If you love shortbread you will like these... This makes around 7 dozen.

Ingredients
  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 cup fine chopped toasted pecans
  • 2 teaspoons vanilla
  • 2 cups all purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Directions
  1. Beat butter at medium speed with an electric mixer until creamy.
  2. Gradually add powdered sugar, beating until mixture is smooth.
  3. Stir in pecans and vanilla.
  4. Stir together flour, baking powder, and salt; gradually add to butter mixture, beating at low speed until blended.
  5. Shape dough into 3 (10inch) logs; wrap logs separately in wax paper, and chill 4 hours.
  6. Cut each long into 28 slices, and place slices 1 inch apart on lightly greased baking sheet.
  7. Bake at 350 degreees for 10 to 12 minutes or until edges are golden.
  8. Cool on wire racks.
  9. Makes 7 dozen.
