How to make it

  • In saucepan, add milk and sugar
  • Heat over medium low heat adding vanilla bean, scraped with the back edge of a knifeadding seeds and pod
  • When sugar is dissolved, raise heat to medium high and bring to between simmer and boil, stirring occasionally, about 1 hour
  • Do not let milk stick to bottom of pan
  • Milk will thicken, turn very light brown, then darken to light tan
  • Strain through sieve into bowl and cool
  • Will reduce to 4 1/2 cups
  • Keeps 2 weeks in fridge
