Mint Cucumber Feta Salad Recipe

This is a very unique, very tasty salad sure to please all. We love it and hope you do too. My catering buddy and I serve this at elegant wedding and bay showers and it is always one of the most requested recipes. Enjoy.

Ingredients
- 2 medium cucumbers
- 1-1/2 cups crumbled feta cheese
- 1/2 cup chopped fresh mint leaves
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 1/4 teaspoon salt
- 1 teaspoon freshly ground black pepper
Directions
- Peel half the skin of the cucumbers in lengthwise strips then cut into very thin slices.
- Arrange slices on a serving platter then sprinkle feta cheese on top followed by the mint. Whisk together the olive oil, lemon juice, salt and pepper and pour over the salad.

Trying to do an "all local ingredients" version, I used crumbled goat cheese from a nearby farm--close enough in flavor to work just as well as the feta.
