Around my house we very rarely have whole milk. We usually have skim, 1% or 2%, none of which works very well when cooking. I buy and keep a few small cans of evaporated milk from Wal Mart for about 49 cents each. Problem solved.

Great post, we've always used evaporated milk in certain dishes we make, especially mashed potatoes,cream pies and homemade cream gravy. Just has a much richer flavor. Five forks !

We keep evap around all the time and have used it as a replacement often. In fact, my son could not use formula as ababy, so we used the canned milk diluted as you say and added corn syrup. (Old recipe my mother used in the '40s) Great post as most of us watch our fat intake these days!
